Once again we have delved into the wooden box of Marjorie Groom's recipes and present to you a wonderful baking delight for the spring. Today is a date loaf from Marjorie's friend May which she used to bake with great regularity. It's very nice warm with a slather of butter and honey!
INGREDIENTS:
1 egg
3 tablespoons butter
1 cup chopped dates
1 cup sugar
2 cups plain flour
Vanilla essence
2 teaspoons bi-carb soda
Pinch of salt
Ginger or nuts
METHOD:
Cut dates, dissolve 1 teaspoon of bi-carb in cup of boiling water and pour over dates. Allow to cool.
Cream butter and sugar. Add beaten egg then vanilla essence then dates. Lastly flour with the other teaspoon of bi-carb.
Mix well. Bake 40-50 minutes at 180 degrees in greased log cake tin or loaf tin.
